Avocado And Tomato Salad



for 2 portions

1 avocado, diced

1 cup cherry tomatoes (200 g), finely chopped

¼ medium red onion, thinly sliced

½ lime, in juice

salt, to taste

2 tablespoons fresh parsley, chopped


Mix all ingredients in a bowl and stir gently to combine.

Cover and keep refrigerated until ready to serve.
