340 g broccoli, cut into small bunches
¼ cup green onions (25 g), thinly sliced
2 large cloves of garlic, finely diced
⅔ cup grated cheddar cheese (70 g)
1 egg, beaten
⅔ cup breadcrumbs (75 g)
salt, to taste
pepper, to taste
2 teaspoons of Sriracha, optional but recommended
Fill a medium saucepan with water and bring to a boil. Season vigorously with salt. Blanch the broccoli in boiling water for about two minutes.
Drain and finely chop the cooked broccoli.
In a bowl, add the broccoli, green onions, garlic, cheddar cheese, egg and breadcrumbs. Optional: Add the hot sauce of your choice. Mix well and refrigerate for 15-20 minutes.
Preheat oven to 204°C (400°F).
Spray a non-stick baking sheet with non-stick spray. Shape the mixture into totes and spread evenly on the baking sheet.
Bake for 8-9 minutes. Turn over and cook for a further 8-9 minutes on the other side until the baking sheet is golden brown.
