Fajita Parchment-Baked Chicken



for 1 portion

parchment paper or aluminum foil, 30.5 x 46 cm (12 x 18 inches)

1 chicken breast

½ red pepper, sliced

½ yellow pepper

¼ red onion, sliced

3 tablespoons of salsa

1 teaspoon taco seasoning

1 tablespoon of Mexican cheese mixture

1 tablespoon of olive oil

salt, to taste

pepper, to taste



Preheat the oven to 200°C.

Fold the greaseproof paper in half, then open it.

Finely chop the peppers and onion and place them on one half of the baking paper.

Drizzle with oil and sprinkle with salt and pepper.

Place the chicken on top of the peppers. Season with taco seasoning, salt and pepper and spoon in the salsa. Cover with cheese.

Fold the parchment paper over the chicken and tie it by folding it over itself along the edges.

Bake for 25-30 minutes or until the internal temperature of the chicken reaches 165˚F (75˚C).
