Good afternoon, it’s a drizzling foggy day here in West Virginia and a perfect day to bake some homemade steakhouse type rolls for supper and to freeze. These rolls are so good I made up some honey butter to go with ours, adding about 1 T. honey to 1/3 C. softened butter, and that just made them even better. I sent Mama a picture of them, she loves her some homemade rolls so I’m anxious to see what she thinks.
My husband just said “are you teasing me honey with one roll?” I laughed and told him he can’t have anymore till suppers ready, the smell in the kitchen of them is driving him crazy right now. Y’all know my whole family loves us some bread regardless of whether it’s homemade or not. One Summer we were spending a couple weeks with Nannie Hembree and she decided to bake some homemade raisin bread for us kids to eat for breakfast. She shewed us all outside to play and Papa came out spending time playing with us while she baked. We could all smell that bread as it was baking and couldn’t wait till we could eat it. Papa decided he needed to go to the bathroom and apparently Nannie wasn’t in the kitchen when he went in the house. Next thing we knew he came outside with the heel of one loaf sliced and buttered on a paper towel for us kids to sample. We looked up and there Nannie stood on the stoop with her hands on her hips looking at Papa knowing good and well what he had done then went back in the kitchen and came out with a slice for all of us.
Homemade Steakhouse Rolls
1 1/4 C. whole milk
1 T. instant yeast (active will work too)
1/4 C. honey
3 T. melted butter plus more for brushing
1 large egg, room temp.
1 tsp. salt
4 C. all purpose flour
Heat the milk in the microwave for about 40 seconds, till luke warm, and then pour in a mixing bowl. Add the yeast and honey, let it sit for about 5-6 minutes till it begins to foam up. Add 3 T. melted butter and the egg, stir to combine. Stir in 3 C. of the flour and the salt, begin combining adding more flour 1 C. at a time till you have formed a nice soft dough. Turn out onto a lightly floured surface and knead for 2 minutes. Use a rolling pin and roll the dough into a rectangle about 1/4″ thick. Use a knife to cut the dough into approx. 20 squares and place on a greased baking sheet. Cover with a clean towel and let them rise did doubled in size, about 1-2 hours. Bake in a 350 degree oven for 14-16 minutes. Brush with melted butter once out of the oven.
