Sausage and Cheese Muffins




1 lb of hot ground sausage.
1 tsp of onion powder.
3 cups of all-purpose baking mix.
1 (10.75 oz) can of condensed fiesta nacho cheese soup.
2 cups of shredded cheddar cheese.
¾ cpu of buttermilk (you can use water or milk).



How to:


In a large skillet, cook the sausage and onion over medium heat. Stir constantly to cook and crumble then drain off fat. Let cool.

Preheat the oven to 375° and lightly grease mini muffin tins.

In large bowl, mix together the sausage, baking mix and shredded cheese.
In a separate bowl, mix together the soup and buttermilk and stir into the sausage mixture.

Spoon the mixture into the muffin tins and fill to the top.
Bake for 15 to 18 minutes and Voila!

Simple, easy and yummy! The last time I made these, it was a side dish, I was surprised how it was eaten first! Give it a try, you will adore them!
