Savoury Bacon Muffins




    1 bowl

    1 frying pan

    1 muffin pan

    1 whisk

    1 wooden spoon




  2 1/2 cup self-raising flour

  1 pinch salt and pepper

  125 g butter cooled melted

  1 cup milk

  2 egg

  2 tsp chives chopped

  100 g parmesan cheese

  100 g bacon rashers diced

  1 baby onion diced

  1/2 red capsicum small diced

  50 g parmesan cheese




 STEP 1 Preheat oven to 200C.

 STEP 2 Fry onion, bacon and capsicum until onion is just soft.

 STEP 3 Sift flour into a bowl, add most of parmesan and season well with salt and pepper.

 STEP 4 Whisk eggs, milk and chives until combined.

 STEP 5 Make a well in the flour and add the milk mixture and the butter, and fold until combined.

 STEP 6 Fold in the onion and bacon mixture.

 STEP 7 Spoon into a greased muffin tray, top with extra parmesan and cook for 20-25 minutes.
