The slow cooker might be our very favorite kitchen gadget. On the busiest of days, you can pop dinner into that wonderful contraption first thing in the morning and come home in the evening to a dinner that’s already done and a house that smells amazing. We all have busy schedules these days and it’s sure nice once in a while to get dinner out of the way early and not think about it all day long. It’s especially nice when you have a recipe that comes with all that convenience but doesn’t compromise on flavor! That’s where this amazing pork loin comes in. Cooked ever so slowly with juicy apples and green beans that turn out just right, you’ll be wondering where it’s been all your life.
We love this particular recipe because it’s almost a whole meal in itself. Add a salad or some bread and you’re good to go! The honey mustard mixture flavors the pork beautifully and the slowly cooked applesauce adds a sweetness that is just meant to go along with tender, falling apart pork. We don’t know about you, but we don’t like our green beans mushy. These beans turn out soft and very tender and we like them just the way they are, but if you are a fan of more crisp beans, you can always hold off on adding them until the last couple hours of cooking.
The steps to make this slow cooked pork are totally simple, but the taste is anything but. We love it too because it makes great leftovers… if it lasts that long!
