Southern hash browns breakfast bowl



3 medium russet potatoes, cubed or sliced
1/2 cup of vegetable oil 
salt and pepper to taste
1/2 red or yellow onion diced
4 slices of cooked bacon for topping
American cheese for topping
Scrambled eggs for topping
Cut potato into 4 pieces ,then cut into cubes




 Rinse potato cubes with cold water, and drain well. Add oil in a large skillet over medium heat. Place potatoes in the skillet, and stir to coat with oil . Season with salt and pepper. Cover with a lid, and cook for 10 – 15 minutes. Remove the lid, drain oil , return potatoes to skillet , add onions and 1/4 cup of water and cook for another 10 minutes, turning frequently until brown and crisp on all sides.. meanwhile cook your eggs and bacon ? ? you can use turkey bacon also.

Once potatoes are done place each portion in a bowl and top with a slice of American cheese, then add scrambled eggs and crumbled bacon on top.
