8 chicken wings
salt, to taste
pepper, to taste
potato starch, to be dredged
frying oil, as required
SWEET SOY GLAZE
½ cup soy sauce (100 ml)
¼ mirin cup (50 mL)
¼ cup sugar (50 g)
¼ cup sake (50 ml)
1 clove garlic, grated
roasted white sesame seed
Preheat the oil at approximately 160˚C (320˚F).
Season both sides of the chicken wings with salt and pepper. Coat with potato starch.
Fry the wings at 160˚C (320˚F) for about 7 minutes.
Heat oil at about 180˚C (350˚F). Fry the wings until golden brown, about 3 minutes. Drain on paper towels. Set aside.
Make the frosting. Combine all glaze ingredients in a shallow saucepan and simmer. Reduce until the icing is thick. Toss wings together.
Sprinkle with toasted white sesame.
